In contrast to big, flabby Chardonnays, this elegantly restrained expression of the variety is very food-friendly. The nose fills with aromas of comice pear, dried apricot and orange blossom, a promise that’s fulfilled with the first taste. Flavors of white nectarine, citrus, and Golden Delicious are interwoven with vanilla and caramel, leading into a long finish that evokes white chocolate and pear-drop candy. Enjoy this wine with a fusion risotto made with shrimp, cardamom, and coconut milk, or serve it with roasted bacon-wrapped game hens stuffed with apples and pears.
